Concept

Kishu Waka Beef is a rare brand of beef from Wakayama with limited production, focusing on the rich flavor of lean meat rather than just marbling.

The fat’s melting point is about 5–6°C lower than typical Kuroge Wagyu, so it melts the moment it hits your tongue. Because the umami is concentrated in the lean meat, it doesn’t feel heavy as you eat. We would be delighted if you felt, “I’ve never had beef like this before.”

Featured on Web Japan (run by the Ministry of Foreign Affairs) and winner of the Premier Wakayama Special Award. Enjoy this rare Kishu Waka Beef as shabu-shabu, the best way to experience the direct flavor of the ingredients. The name “Lab” (Kenkyujo) reflects our desire to carefully and deeply convey the appeal of this beef.

One two-tone pot per person. You can choose two of your favorite broths, so there’s no need to coordinate with the person next to you. “I’ll try this broth today”—that small choice makes the meal even more enjoyable.
